Warm Butternut Squash, Quinoa and Kale Salad

Now that it's getting colder here in Utah, I want some warmth to my meals. Here is a great Semi-Raw meal to warm you up and give you tons of live enzymes, protein, and deliciousness all in one. I hope you enjoy it as much as I did tonight! Serves 6-8 people.
INGREDIENTS: 1 head kale, chopped 2 cups cooked quinoa, warm 2 T. hemp seeds 2 T. olive oil

T. pure maple syrup 1/2 medium sized Butternut Squash, diced 1 1/2 c. dried cranberries 2-3 stalks green onion, diced
Juice from 1 Mandarin orange Slices from 1-2 Mandarin oranges
Dash sea salt
Ground pepper to taste
INSTRUCTIONS:
1. Cook the quinoa by boiling 4 cups water in a pan. When boiling, add 2 cups uncooked quinoa and turn heat to low. Stir, put lid on and allow to simmer for 15 minutes or until water is mostly gone.
2. In a large bowl, add all other ingredients except the Mandarin oranges and mix until combined.
3. When quinoa is finished cooking, add warm to the salad mixture in the bowl. Toss until combined. Add Mandarin oranges and toss lightly, then serve warm.
